What is Coconut Nectar / Syrup?

Coconut syrup is a delicious natural sweetener, made from the nectar of coconut palm flowers. This nectar is found inside the blossoms of the coconut palm tree. Farmers tap the sweet nectar in a way similar to that of maple syrup production then collected in bamboo containers and placed under controlled evaporation until they reach the consistency of syrup. This evaporation can be carried on to produce another coconut product we know and love which is crystallized coconut sugar where we can also use it in other delicious recipes.

How Coconut Nectar/ Syrup Taste Like?

You would think that raw coconut nectar tastes like coconut but it really doesn’t. It has a very sweet caramel-like flavor that we liken to molasses or palm tree fruit.

Why and how should I use coconut syrup?

It is a Low Glycemic Natural Sweetener
The Glycemic Index (GI) is the standard measurement used to rank how fast blood sugar levels rise after we drink or eat a particular type of beverage or food over a 2-3-hour period of time.

The lower IG, the slower the sugar level release into the bloodstream, raw coconut nectar is one of these sweeteners (GI 35).  It not only contains low amounts of glucose, sucrose, and fructose but it is also high in prebiotic fiber that aids in the process of digestion.

Low GI sweeteners are healthier choices for most individuals, but they are particularly beneficial for diabetics and those who wish to lose excess body weight. This is because they are less apt to cause blood sugar spikes which may also cause sugar cravings and addictive eating behaviors.

High in Enzymes
Because coconut nectar is naturally sweet right out of the tree it doesn’t require high heat evaporation techniques or chemical processing to make it sweeter and therefore raw living enzymes in coconut palm will be inherent as well as all the nutrient content.  These enzymes help to digest the sugars in time which contributes to its attributes as a low GI sugar substitute.
