Cooking Instruction:

  1. Boil pumpkin until tender - about 10 minutes. 
     
  2. Add spices, coconut milk, stock,tomatoes, and tomato paste. 
     
  3. Bring to the boil and season with salt and pepper. 
     
  4. Add chickpeas and lentils.
     
  5. Reduce heat to a simmer, cover, and cook for a further 15 minutes. Add spinach at the end and give enough time for it to wilt. 
     
  6. Serve with love earth brown rice, or love earth tri quinoa
